polenta fries

These fries are a nice alternative to your usual potato fries. Maize is a good source of fiber and anti oxidants, in particular eye-healthy carotenoids. 

 
 

HERBED POLENTA FRIES (GLUTEN FREE)

1 cup instant polenta

2 cups milk (500ml)

2 bay leaves

50g parmesan cheese, grated

salt, pepper

a few sage leaves, chopped

thyme, chopped

olive oil

pour milk into a medium saucepan, add bay leaves and bring to a boil

reduce heat and add polenta, stir thoroughly 

add parmesan cheese, salt, pepper, thyme, and sage

stir for another 5-10 minutes or until becomes thick

transfer to a parchment-lined rimmed baking tray and put into the fridge until firm

cut the polenta into 2cm x 5cm chips and cook, in batches, for 2–3 minutes or until golden.

 

serve with a dip of your choice (I simply mixed ketchup and sriracha sauce together..
