Here is a delicious bread recipe full of protein and healthy fats. What I love about it is that it’s really easy to make. The texture is quite moist and dense but crisp on the outside. The bread is not as airy and spongy as a normal gluten-containing bread but definitely more nutrient dense. Sweet potato, almonds, flaxseeds, oats, eggs..the good stuff!
I like to bake it in advance, slice it and then freeze it. Whenever I need it, I just throw a slice into the toaster and tadaaaa...
Flax seeds are an excellent source of omega 3 fatty acids. These polyunsaturated fatty acids are crucial for hormone production and regulation of inflammation as well as genetic functions. Further, flax seeds are rich in dietary fiber and protein (Flaxseed provides about 28 g of total dietary fiber per 100-g dry weight) Essential vitamins and minerals found in flaxseeds are niacin, folic acid, and g-tocopherol, potassium and phosphorus.
sweet potato protein bread
100g (1 cup) flax seeds, ground
100g fine almond meal
100g (1 cup) oat flour
1 medium sized sweet potato, grated
1 tsp salt
1 tbsp baking powder
4 whole organic eggs
30g (2 tbsp) olive oil
preheat oven to 170C
combine all ingredients into a bowl
spoon mixture into a loaf tin
bake for about 1 hour
remove from oven and allow to rest in the tin
tastes great with nut butter, avocado and poached eggs, smoked salmon, butter and chives...mmmh
