TARO FRIES + Sriracha Tahini Dip (vegan)

If you want to change up your potato or sweet potato fries, try taro fries! Instead of a mayo or aioli, I made a vegan version with tahini, spiced up with garlic, ginger and sriracha sauce for the extra kick.

The taro root is a very starchy root consisting of mostly complex carbs called amylose and amylopectin. Taro is a good source of B Vitamins and zinc, magnesium, copper, iron, manganese, and potassium. 


TARO FRIES + Sriracha tahini dip (vegan)

1 medium taro root

oil, salt + pepper

 

3 Tbsp. tahini

1-2 Tbsp Sriracha sauce (depending on how spicy you like it)

3 garlic cloves, minced

1 small piece of ginger, minced

juice of 1/2 lime

100ml hot water

preheat oven to 200°C

peel taro root and cut up into fries

drizzle with olive oil and salt + pepper

bake for 20-25min 

 

in a small bowl combine tahini, sriracha and spices and stir

add water spoon by spoon until emulsified

add more water if needed
