Whatever the day brings for you, these raw power bars will hit the spot and provide you with enough energy to tackle every problem. They are packed with almonds, sunflower seeds, unsweetened coconut, chia seeds, flax seeds, cardamom, and dried figs a.k.a. healthy fats, fiber, carbs and protein!
Figs owe their food value mostly to their mineral and sugar contents. Figs are an excellent source of calcium (only cheese and a few types of nuts have a higher calcium content). They are richer in iron and copper than nearly all fruits and vegetables and most other dried fruits. If you like the term, call figs a SUPERFOOD!
CARDAMOM, one of my favorite spices, belongs to the ginger family (Zingiberaceae) and is popularly known as the “Queen of spices”. You can buy them in capsule form or ground (good for baking). Capsules are great for tea, coffee or soups and stews and add a lot of flavor and aroma.
Earl Grey, Figs and Cardamom Power Bars (v, gf, df)
250g dried figs
30g flaxseeds ground
1 tsp ground cardamom
2 tbsp tahini
1 pinch of salt
1 cup shredded coconut
1 cup toasted almonds
1/2 cup sunflower seeds, toasted
1 tbsp. chia seeds
2 bags earl grey tea
brew earl grey tea for 5 minutes,
cut off ends of stems of figs (tiny hard parts)
add figs to the tea and let soak for 10minutes
meanwhile, toast almonds and sunflower seeds in a pan until you can smell a roasting aroma
drain figs (discard or keep the tea - tastes yummy!)
add 2/3 of the almond/sunflower mixture, cardamom, tahini, chia seeds, flax seeds, salt, shredded coconut, and figs into a food processor and blend until everything comes together - add the remaining almonds/sunflower seeds and pulse another few times until incorporated
press the mixture into a lightly greased 20cm square tin lined with a nonstick baking paper top with remaining coconut
refrigerate for 1h or longer until firm
