seed + parmesan flat bread

This flatbread is incredibly easy to make and add a little flair to your next dinner party. You can make it days in advance and serve it the day you needed as finger food with delicious toppings. You can bake it for a little longer until they get crisp and you have amazingly crunchy cracker. Stack them up, throw them on a wooden board, add a piece of nice cheese and a knife and everyone will love it. They taste much  better than store-bought crackers and since you are in control of flavor you can add any herb or spice you prefer. Lastly and not less important, the nutritional value is excellent! 

If you don’t have a food processor simply use ground almonds, cheese and quick oats or oatmeal, chop seeds and rosemary with a knife and combine everything by hand. Use any kind of herbs you like, dried or fresh. I used fresh rosemary, dried oregano, and dried thyme simply because that's what I had in the pantry. 


For a vegan version, add another 30g chia or flax seeds and leave out the parmesan cheese. 


You can cut these flatbreads  in all shapes and forms, using cookie cutters or knives.

  • cream cheese + prosciutto + fresh figs
  • herb cream cheese + radishes + chives
  • blue cheese + pear + walnut 
  • humus + olives 
  • roastbeef + cranberry jam 
  • ham + pickles 
  • brie + pear/apple + black pepper 
  • pesto + cherry tomatoes 
  • tuna spread + egg 
  • avocado cream + shrimp + lime + chilli 

seed & parmesan flatbread

50g parmesan cheese

100g almonds

200g rolled oats

1 Tbsp.dried oregano

1 Tbsp.dried thyme

1 Tbsp.onion powder

1 Tsp.salt

fresh rosemary

150g mixed seeds

300ml water

If using whole almonds and parmesan cheese, blend in a high speed blender until ground

transfer to an empty bowl

add oats and fresh rosemary to the food processor and blend for about 10 seconds

add remaining ingredients and combine

let rest in a bowl covered with cling film for about 20mins

pre-heat oven to 180C/350F

sprinkle some olive oil on a parchment paper

flatten dough on the parchment paper

bake for 30min

take out and cut into pieces

put back into the oven for another 5-10 min or until golden and crisp
