This dish combines earthy flavors from the roots and spices with salty feta, fruity orange, and nutty seed crunch. I used Rawesome which is a mix of sprouted flax, hemp, and chia seeds as well as dried fruit and vegetables. Alternatively, you can grind your own flax, chia, or/and hemp seeds. Needless to say, this dish is packed with nutrients, complex carbs, vitamins and minerals, healthy fats, and fiber.
Make a big tray of roasted veggies, prepare the superfood crunch, and the feta cream and you will have lunch for days! It is also super affordable!
Roasted Roots, Feta Orange Cream & Garlicky Superfood Crunch (serves 2)
2 large Carrots
1 Tbsp. onion powder
1 Tbsp. ground cumin
1 Tsp. cayenne pepper
1 pinch of salt and pepper
for the feta cream:
juice and zest of 1/2 orange
fresh black pepper
for the crunch:
1/4 cup quinoa flakes
1/4 cup coconut flakes
1/4 cup Rawesome mix (or ground flaxseed)
pinch of salt
1 Tbsp nutritional yeast (optional)*
1 garlic clove, minced
1 knob of butter
1 small bunch of parsley
preheat oven to 190°C
cut carrots lengthwise into halves, and parsnips lengthwise in quarters, marinate with spices and olive oil and bake for approximately 20minutes or until golden brown
meanwhile, mix feta, orange zest, orange juice, and black pepper together and whisk until creamy (or blend in food processor)
if you want to be fancy, transfer mix to a piping bag and store in the fridge until used
for the superfood crunch, add all ingredients into a pan and roast on slow heat until golden brown (3-5minutes)
let it cool (I store mine in a jar in the fridge and use it as a topping for all kinds of things such as salads, soups, scrambles, etc.)
drizzle some olive oil and lemon juice over the parsley leaves
once veggies are done, take them out of the oven, place everything on two nice plates and serve
*nutritional yeast is a deactivated yeast, that adds a cheesy flavor to dishes. You can get it at any health food store or supermarket.
