It’s apricot time!! One of my favourite time of the year, apricot season means summer, sun, long nights, BBQs, fruit picking, my mom’s famous apricot jam, Austrian marüüüüüüünknedl (sweet apricot dumplings) and many more delicious dishes. This recipe is particularly tasty, the sweet apricots are paired with salty halloumi cheese, sweet honey, thyme, and crunchy pistachios and make a match made in heaven. A hit for every BBQ party!
Apricots provide more than three times the carotene than peaches and three times the vitamin C of pears. They are also high in potassium, calcium, phosphorus, fiber and iron.
Grilled Apricot Halloumi Skewers with thyme honey and pistachios
4 wooden skewers (soaked in water for 10minutes)
8 fresh apricots
1 pack halloumi cheese
1 bunch fresh thyme
2 tbsp honey
1 handful pistachios
cut apricots in half, remove pit
cut halloumi into 1 inch cubes
thread, alternating apricots and halloumi, onto the soaked skewers
grill skewers, turning occasionally, until halloumi is beginning to char, 2-3 minutes per side.
Remove from heat, drizzle honey on top,
add thyme leaves and chopped pistachios
