Rainbow rice paper rolls

These beautiful rice paper rolls are packed with fresh summer flavours and served with my famous peanut sauce. You can mix things up using whatever seasonal veggies you have on hand, the more colours the better! Hot summer nights or picnics are a great occasion to make these - or for casual entertaining when you let your guests roll their own rolls.

RAINBOW RICE PAPER ROLLS 

rice paper

fresh coriander

lettuce

red bell pepper

sprouts

grilled chicken or tofu

mango

avocado

carrots

red cabbage

thinly slice veggies

soak rice paper in lukewarm for about one minute or until soft (depends on their thickness)

one sheet at a time, pat them dry with a clean kitchen towel

start placing vegetables, tofu/chicken in the middle of the rice paper

fold both sides into the middle and then the bottom,  roll up firmly to enclose filling

repeat with remaining rice paper rounds and filling

you can store the  rolls in the fridge for a few hours and cut them in the middle before serving 

serve with peanut sauce and remaining coriander
