Asparagus and goats cheese mini pizza on black bean crust

I had no flour or yeast in the house but serious cravings for pizza!  I had soaked black beans the day before, and tadaaa..surprisingly things turned out great! This pizza is delicious. The crust is completely gluten free and very crisp. 

Beans are amongst the most nutrient dense foods. They are high in fiber, protein, and complex carbs. Black beans are a great source of folate, potassium, and iron. 

mini pizza with asparagus and goats cheese (black bean crust)

1.5 cups soaked black beans (overnight)

1 egg

1/3 cup buckwheat flour

2 Tbsp coconut oil or organic butter

salt, pepper


for the topping:

asparagus, shaved

goats cheese

pizza cheese


rinse black beans and add into a food processor and blend until ground

add rest of ingredients and blend until comes together 

wrap in cling film and store in the fridge for a minimum of 30 minutes

preheat the oven to 180ºC/350ºF

on a flour-dusted surface, roll out the rested dough to roughly ½cm thick, form 4 discs 

roll the pastry up around the rolling pin

transfer to a baking tray lined with parchment paper

bake in the oven for 15-20 minutes, or until lightly golden

take out of the oven and add toppings

put back in for another 5 mins or until cheese is golden
