Green beans + garlicky crunch seed pesto

Green beans can be boring. Most people have some kind of veggies in the fridge but don't really know what to do with them, and then they go bad and land in the compost. The trick is to make them more exciting and to enhance their flavor with spices, fresh herbs, good oils or nuts and seeds. This recipe uses lots of garlic..and to be honest.. who doesn't like the smell and taste of roasted garlic? I add some pumpkin seeds and almonds to create a crunch, also add a little bit of lemon zest to give it an aroma boost. Try it, it's sooooooo good! 

This 'pesto' goes well with any kind of vegetables. Combine it with steamed broccoli, cauliflower, asparagus, potatoes, swiss chard, carrots...

OR drizzle over FISH! Garlic + lemon + fish ---> Hell yeah! 

Green beans + garlicky crunch seed pesto

green beans (or any other greens), steamed

1/2 cup almonds (slivered or whole)

1/2 cup pumpkin seeds

5 garlic cloves (at least), minced

1 tsp salt

1/4 cup olive oil

zest of 1 lemon

chop nuts

add olive oil to a small saucepan and put on stove at low-medium-high heat 

add rest of ingredients 

cook for about 5 minutes or until garlic is golden

stir occasionally

pour over beans (excess can be stored in a jar in the fridge)
