Green Falafel

These falafel are simple, requiring just a few ingredients, and come together in a blender or food processor. These are perfect for a party snack..serve different condiments in bowls and everyone can assemble their falafel pita bread or lettuce cup. 

The key to healthy cooking is to add a few nutritional boosts to your regular dishes. These falafels include tahini paste and pumpkin seeds which are a good source four protein, calcium, healthy fats and essential amino acids. Instead of deep frying them cooked them in the oven which reduces the fat content drastically. Sneak in some broccoli and you add even more fiber and nutrients.


1 small head of broccoli

1 tbsp tahini

1/2 cup parsley leaves

1/2 cup mint leaves

1/2 cup cilantro leaves

1 tsp green chili

zest of one lemon

2 spring onions, chopped

1 cup pumpkin seeds, ground

sea salt, black pepper

1 tsp cumin

1 can chickpeas


pita bread

cucumber shaved

sliced tomatoes


red cabbage


preheat oven to 180C/350F

add broccoli florets, tahini, chickpeas parsley, salt, pepper, cumin, mint, lemon zest, chili, and onion into a food processor and blend until mixture comes together

add ground pumpkin seeds and stir to combine

shape into patties and place on oven tray lined with parchment paper

cook for 20-25 min or until golden brown and firm

fill pita bread (or lettuce cups) with vegetables, hummus, and falafel
