a Better Bean Bowl

This recipe is slightly Mediterranean flavored due to the basil- tomato- cucumber and olive salad and lots of garlic. You can also alter this meal by adding or substituting ingredients based on what you have in the fridge or pantry. 

It is incredibly healthy and packed with nutrients. Quinoa and black beans are high in protein and fiber, avocado and pepitas deliver healthy fats, and vegetables are rich in vitamins, minerals, and fiber. 

QUINOA BLACK BEAN BOWL

1 cup red quinoa

1,5-2 cups of water

 

3 tomatoes

1/2 cucumber

black olives

1 small bunch of basil leaves

lemon juice

salt, pepper

 

2 cups black beans, soaked overnight and cooked (or canned)

 

1 Tbsp dijon mustard

salt, pepper

juice of 1 lemon

2 Tbsp walnut oil

 

1 bunch of broccolini

2 garlic cloves

olive oil

salt, pepper

 

1 cup pepitas

1 avocado

 

1 Tbsp dijon mustard

salt, pepper

juice of 1 lemon

2 Tbsp walnut oil

pour quinoa into a small saucepan

add water, bring to a boil, reduce to simmer, cover until quinoa is soft 

chop up tomatoes, cucumber and basil leaves 

add olives, salt, pepper and lemon juice 

combine everything 

chop up broccolini into bite sized pieces

drizzle olive oil into a pan

cook broccolini  together with garlic, salt, and pepper until soft but still crunchy

for the dressing add all ingredients into a jar and shake 

roast pepitas in a dry pan over high heat until golden

slice avocado

Assemble salad, beans, quinoa, avocado and broccolini in a nice bowl. Sprinkle pepitas on top and pour dressing over quinoa.
