Trying to defy the snow and rain in cold Vancouver, I was in the mood for something nourishing, warming and filling. These stuffed sweet potatoes are so easy to make and tick all criteria when it comes to nutrient requirements as well as taste! You will love the sweet taste of the potatoes combined with fresh herbs, salty feta cheese and fresh zingy avocado-mint sauce.
Sweet potatoes and the stuffing are high in carbs and healthy fats, ideal for an active day to fuel your body and aid muscle recovery. It is quite filling so you can totally eat it is as a main dish.
The Avocado-mint sauce is creamy, fresh and has a zinginess to it that is absolutely yummy. The easiest way to make it is by throwing all ingredients into a blender and blitz it up until smooth. Watch the video and you will see :) Oh and it's very garlicky too...
Add a little bit more orange or lemon/lime juice or vinegar and you can use it as a salad dressing. It works well with fish or meat or simply roast potatoes and vegetables.
Avocado - Mint Sauce
1 ripe Avocado
1 cup mint leaves
3 garlic cloves
juice of 1 orange/lemon/lime
blend all ingredients until smooth
SWEET POTATOES are an incredibly good source for beta-carotene, which raises blood levels of vitamin A, which is beneficial for our eye health and immune system. Besides the high vitamin content, sweet potatoes are high in fiber and carbs. The protein content is not very high, however, the quality of it is almost complete. The orange spuds are an excellent source of Vitamin A, E, C, Potassium, Manganese, Vitamin B6, B5, and antioxidants. For the fat-soluble Vitamins, it is important to have sufficient fat for the absorption, cook potatoes with a little bit of oil, add nuts, avocado, dairy products etc. Due to the high carb content, sweet potatoes are an excellent pre-workout snack/meal and fuel for muscle recovery post workout.
AVOCADOS, rich in healthy fats and nutrients are one of the most nourishing plants on earth. It is an excellent source for vitamin E, K, B6, B5, C, folate, potassium, and fiber. One avocado has the potassium content of 2-3 bananas, however, also three times the calories. The fat in avocados helps absorb fat-soluble vitamins A and E. Avocados have cholesterol lowering potential and may also lower symptoms of osteoarthritis.
chickpeas, dried tomatoes, fresh parsley, spring onions, ground cumin add more flavour and nutrients.
mix all ingredients together
crumble feta cheese on top and bake for another few minutes until golden brown

stuffed sweet potatoes
1 - 2 medium-sized sweet potatoes
1 Cup cooked chickpeas
1 handful sundried tomatoes
1/2 Cup chopped parsley
1 Tsp ground cumin
1/2 Cup chopped spring onions
50g feta cheese
preheat oven at 200C/400F
cut potato in half, drizzle with olive oil and a pinch of salt, put in the oven for 45-50min
when potatoes are cooked, scoop out most of the flesh and put in a bowl
combine sweet potato flesh with remaining ingredients and mix together
put filling back into potato skins, crumble feta cheese on top and put back into the oven on grill function until cheese is golden brown
take out of the oven and serve with a fresh salad and drizzle with avocado sauce
arnish with the avocado mint sauce, fresh salad, some greens, fresh black pepper and DIG IN!
