Apricot Cardamom Tahini Breakfast Shake (gf, v, df)

This shake is a very aromatic and flavorful drink that I enjoy for breakfast in the summer months with fresh fruit. It is quite rich and creamy due to the tahini paste. To make it an, even more, nutritious and filling breakfast smoothie, add some oats and more milk. 



CARDAMOM, one of my favorite spices, belongs to the ginger family (Zingiberaceae) and is popularly known as the “Queen of spices”. You can buy them in capsule form or ground (good for baking). Capsules are great for tea, coffee or soups and stews and add a lot of flavor and aroma. 

Apricot cardamom tahini breakfast shake (serves 2)

4 fresh or frozen apricots

1 1/2 cups nut milk

1 tbsp tahini sesame paste

2 tbsp chia seeds

1/2 tsp ground cardamom (available at most supermarkets, whole foods, middle eastern stores)

1 tbsp honey (optional)

remove pit from apricots and add to a blender

add milk, cardamom, tahini, honey and cardamom

blend until smooth

add chia seeds, stir to combine and let sit for a few minutes (you could even make it the night before)
