Best Vegan Brownies

Those are one of the easiest, most delicious, and satisfying brownies I’ve ever made and tasted. Even though they’re vegan enjoy them in moderation since they contain quite a lot of sugar. Don’t skip the sea salt flakes part - sea salt flakes elevate your regular chocolate brownies to the next level! Cacao nibs add a delish crunch and some fiber. We all could use more fiber in our life.


4 Tbsp ground Flax or Chia seeds 

1/2 cup water

1/2 cup white sugar

1/2 cup brown sugar

1/4 cup flour, sifted +1 tbsp. each baking powder and soda

160g dark chocolate (70% or more cacao)

1/3 cup coconut oil

1/2 cup unsweetened almond or soy milk

sea salt flakes and cacao nibs 

preheat oven to 170C/350F 

combine ground chia/flax seeds with water and set aside for 10min

in the meantime, bring about an inch of water to a simmer in your saucepan. Set the heatproof bowl in the mouth of the pot, making sure the water doesn't touch the bottom of the bowl. Stir chocolate and coconut oil occasionally as it softens

add flax/chia mixture to a bowl together with sugar, and liquid chocolate, stir to combine

gradually add flour and milk and fold in (don’t overmix)

spread batter into prepared brownie pan

sprinkle cacao nibs and sea salt flakes on top

bake in preheated oven for 30-35 minutes
