Cashew vanilla parfait with buckwheat granola (gf, df, v)

This cashew parfait with buckwheat granola and fresh fruit is a great dessert, breakfast or afternoon snack. The cashew cream can be used for many other dairy free raw desserts or ice creams. The buckwheat has a great nutty taste, strawberries or any other kind of fruit adds a very nice fresh component. Oh and not to forget to mention, it's packed with nutrients!

Buckwheat is not a cereal grain but a fruit seed.  It is gluten-free and incredibly nutritious. It is a good source of magnesium and a good source of manganese, phosphorus, pantothenic acid, fiber and protein. The protein in buckwheat is a high-quality protein, meaning it contains all essential amino acids our body needs.

Rutin and quercetin are the two main flavonoids in buckwheat, which function as antioxidants. Rutin helps to maintain blood flow, keeps platelets from clotting, and strengthens capillaries. Consequently, diets that contain buckwheat are shown to lower cholesterol levels and high blood pressure and further fight cardiovascular diseases  

Cashew vanilla cream (serves 6)

160g (1.5 cups) cashews, soaked overnight

seeds of 1/2 vanilla bean

juice of 1/2 lemon

1/4 cup maple syrup

1/2 cup coconut milk

mix all ingredients in a blender until smooth

store in the fridge in an airtight container

Buckwheat granola

2 cups buckwheat groats, soaked for a couple hours or overnight

1/2 cup pumpkin seeds

1/2 cup coconut flakes

1/4 cup honey or maple syrup

1/4 cup coconut oil, melted

1 pinch of cinnamon

1 pinch of salt

Preheat oven to 350°F / 175°C.

In a large bowl combine oats, buckwheat, coconut flakes, pumpkin seeds

In a small saucepan over low-medium heat, melt coconut oil. Add honey, cinnamon, and salt. Whisk to combine until smooth.

Pour liquid ingredients over dry and toss to combine

spread evenly over 2 baking trays lined with non-stick baking paper. 

Bake, stirring occasionally, for 25–30 minutes or until golden and crisp. 

Let cool and store in an airtight container until ready to use

to assemble the parfaits, cut up strawberries, add to little jars or glasses, spoon the cashew cream on top and add the granola
