Chocolate Coconut Bars

In terms of flavour, these bars remind me of Bounty bars or Rafaello balls. Super dense, rich and delicious! It takes about 10 minutes to make them, plus cooling time. You don’t need fancy equipment or crazy ingredients. 

The sweetness comes from maple syrup. The pinch of sea salt is essential to balance out the sweetness and increase the chocolatey flavour of the cocoa.

140g pure creamed coconut (you will find it in Asian food stores)

100g coconut shreds

1/4 cup maple syrup

1 pinch sea salt

1 vanilla bean or vanilla essence


for the chocolate

2 tbsp coconut oil

2 tbsp raw cocoa powder

1 pinch sea salt

1 tbsp maple syrup

for the bars, add all ingredients into a bowl and whisk until combined 

spread out on a baking tray and flatten with a spatula (1,5cm thick)

put into the freezer for about 20min




Melt coconut oil in a medium bowl. Add remaining ingredients and whisk together until smooth

cut coconut filling into bars (or bite size)

coat with chocolate glaze 

place into fridge until completely firm
