PAPAYA POMELO fruit salad + MINT LIME pesto

The mint-lime pesto gives this fruit salad a special twist. Fresh and zingy flavors combined with crunchy almonds and juicy papaya and pomela…mhhhh 

You could just cut everything up and throw it in a bowl..done. Spend some extra time to make it look pretty and you can serve it as a dessert. Add a scoop of ice cream and it will be even more extravagant. 


Papayas are excellent sources of antioxidants, such as carotenes, Vitamin C, and flavonoids. It contains high amounts of folic acids, Vitamin E  as well as fiber. Additionally, papaya contains a protein-digesting enzyme called papain which aids indigestion, allergies, chronic diarrhea, hay fever or sports injuries. 


The fat of almonds in the pesto help absorb the fat-soluble vitamins A and E. YAY

PAPAYA POMELO fruit salad + MINT LIME pesto 

(serves 2-3) 

1 Papaya

1 Pomelo


1 handful of fresh mint leaves

100g raw almonds or macadamia nuts

2 Tbsp honey

zest + juice of 1 lime

peel papaya and pomelo 

shave papaya flesh and place shavings loosely onto plates 

place pomelo chunks in between shavings 


for the pesto, blend all ingredients in a food processor

drizzle over fruit salad

serve with a smile
