I needed a last minute dessert for NYE and remembered this smooth, creamy and super-chocolaty chocolate mousse. It happens to be vegan and dairy free. Hell yeah! What a dessert to start the new year, you don’t even have to neglect your dietary resolutions for 2018. The secret ingredient is silken tofu, which acts as a cream or sour cream minus the calories.
Tofu has a bad reputation, it looks weird, it has no flavor, tastes like a sponge or feels some other weird texture. I’ve always liked tofu, in any kind of form and flavor. Whenever I make tofu for someone other than just me I make sure I season it right, that's the trick! The holy trinity ginger, chili, and garlic works wonder here. In terms of health, there are many conflicting opinions out there. Soy and soy products have been a staple in many cultures for a long time due to its great nutritional profile including high amounts of good quality protein and little fat. However, soy contains phytoestrogens that can act as estrogen in our body. The fact is, soy products as a part of a balanced diet is 100% safe (unless you are allergic to soy) and a great alternative to meat.
4 ingredient chocolate mousse (v, df, gf)
400g silken tofu
200g dark chocolate
1 tbsp coconut oil, melted
1 tbsp honey/maple syrup/agave syrup or any other sweetener of your choice
add silken tofu, honey, salt and coconut oil in a food processor or blender and blend until smooth
transfer to nice glasses
trick 17: add mousse to a piping bag (a plastic bag does it too), cut the end and pipe into the glass
chill in the fridge for 30minutes or longer
serve with graham cracker, coconut cream (the solid part of coconut milk + maple syrup + vanilla), and pomegranate seeds
