Pumpkin Peanutbutter Balls (gf, v, df)

It's the season, what can I say. Pumpkin everything..everywhere you look. But that's ok because I love pumpkin in all forms and flavors. These balls are a great treat without the guilt. 4 Ingredients: Pumpkin, Peanutbutter, Oats & Dates...and some spices. That's it! I made the pumpkin puree from scratch...simply because I've never used the canned one. No idea how it tastes and it also seems kinda strange to me to buy canned pumpkin. Oh well...


PUMPKINS are excellent sources of carotenes - the richer the color the richer the concentration. Also, they are a very good source of Vitamin C, B1, folic acid, pantothenic acid, potassium and dietary fiber, as well as Vitamin B6 and niacin. 

Pumpkin peanut butter balls (makes 15 balls)

1 cup pumpkin puree

1/2 cup natural peanut butter

1/2 cup oats

1 handful dates

1 tsp each, ground cinnamon, cardamom, ginger

(or 3 tsp pumpkin spice)



hemp seeds

raw cocoa powder

I made the pumpkin puree from scratch (just roast chopped pumpkin for 30min at 180C, take out, let cool and mash with fork or food processor), canned puree should be ok too 

chop dates with a knife or add to a food processor

add rest of ingredients and pulse a few times until combined 

transfer into a bowl and store in the fridge for one hour or more 

Roll them with the palm of your hands and add chopped pecans, hemp hearts, or cocoa powder but some extra flavor and texture

Store in an airtight container in the fridge
