I admit, avocado pie sounds weird! It doesn't taste weird though! Very fresh and creamy, sweet and satisfying!
AVOCADOS are one of my favorite fruits. The smooth, rich and creamy texture is great for dips, dessert creams, instead of butter on bread… for face masks.. endless options. Avocados are good sources of Vitamin A, Vitamin C, Vitamin K, folate, potassium, magnesium, fiber and healthy fats (monounsaturated fatty acids). It aids digestion, heart health, blood pressure, bone health, and muscles. The high fat content in avocados helps absorb fat-soluble vitamins like vitamin A or E. Make sure you get ripe ones full of flavor!
LIMES are not only good for making caipirinhas or as a chaser for shots. I love squeezing some lime into salad dressings, tea, on fish or poultry, into hummus or into homemade lemonade. Buy organic limes and use the zest for chicken marinades, desserts, baked goods or throw them into your water bottle for some aroma. Limes are a good source of vitamin C and antioxidants.
RAW AVOCADO LIME PIE BITES
for the crust:
1 cup Pecans
1.5 cups Dates
1 cup Coconut shreds
1 Tbsp. raw cocoa powder
for the filling:
3 ripe Avocado
2 Tbsp. Coconut oil, melted
Juice of 1 lime
Zest of 1 organic lime zest
1/4 cup Honey/maple syrup
1 pinch of sea salt
throw all ingredients for the crust into a food processor and blend until a dough forms (add a splash of water to help ingredients to combine)
press into baking dish and let cool in the fridge
in the meantime blend all ingredients for the fulling until smooth
fill into baking dish and cool for a couple hours
makes about 9-12 bites or 4-6 bigger slices.
