Zucchini Halloumi Fritters

These fritters are a perfect brunch dish. Creamy and salty, crispy and smokey. 

It is higher in fat due to halloumi cheese and avocado, however, low in carbs and high in protein. The recipe serves two and is plenty enough. Add a little green salad or some tomatoes to make it a nice dinner. 

for a vegetarian version leave out the ham

Zucchini Halloumi fritters

1 medium sized zucchini

100g halloumi cheese

50g smoked ham

1 egg

1 Tbsp flour 

Salt, Pepper

2 eggs 

1 small Avocado 

grate zucchini and add to a bowl

add 1/2 tsp of salt and combine

let sit for 5min

in the meantime grate halloumi cheese

chop ham and add to a bowl

squeeze grated zucchini to remove excess water

add to the bowl with rest of ingredients

mix to combine 

add oil to a frying pan and put on medium heat

spoon mixture into frying pan (makes 6 fritters)  flattening with spatula into rounds

cook for 1-2 minutes each side 

top with some avocado cubes 

place the poached egg on top 

grind black pepper on top
